Ridiculously Easy White Chocolate Marshmallow Squares

These are very sweet and delicious, can be decorated with any sweets & sprinkles to suit a party theme, and only take about 10-15 minutes to make.
Tip: If you sell or gift these, make straight into a traybake box lined with baking paper to save time. No need for the foil tray - they can just lift out the paper to slice them up.

Ridiculously Easy White Chocolate Marshmallow Squares
Makes 16 large
Prep time 10-15 mins plus cooling & cutting
Ingredients:
400g white chocolate - even the cheap stuff works
450g mixed marshmallows - buy a mix of mini and standard sized ones
Sprinkles, freeze-dried raspberries, sweets for topping
A little melted dark or milk chocolate to drizzle
Method:
Line a baking sheet with baking paper, making sure to leave plenty overlapping the edges.
Melt the chocolate gently - you can use a microwave on lower power, but white chocolate can be temperamental so I find it safer to use a metal bowl over a pan of barely simmering water.
Once melted, stir in the marshmallows until fully coated.
Pour quickly onto the baking sheet and spread out before it cools.
Top with sweets & sprinkles while still melty. Leave to cool.
Once cool, drizzle over some melted dark or milk chocolate.
These will keep for 3 weeks in a cool dry place if you don't cut them. Wrap in a layer of baking paper and then cling film.
When you're ready, cut into squares, whatever size you prefer. Once cut, store airtight and eat within a week or the cut edges of the marshmallows dry out.
